Fermentation is in French oak for 8-10 months, which gives the wine impressive structure and testure without overt oak flavours. The palate presents white peach, oatmeal and subtle vanilla with hints of cedar, toasted oak and roasted almond characteristics.

Aromas of plum, cedar and fennel seed which lead to a palate of lush, over ripe strawberries and juicy red fruits, with a spicy, savoury finish.
2015 Vintage Sparkling
This 2015 Sparkling was produced from Chardonnay and Pinot Noir grapes using traditional method champenoise. It is a brut style sparkling showing quince and apple characters on the nose, leading to a palate of toasty brioche, honey, and a creamy mouthfeel.
